I got this idea from Pinterest and it's pretty amazing. I added my own spin to this recipe because it needed some extra flavor.
I used Bisquick as the base and just did the basic pancake mix. I did three different kinds of pancake muffin bites.
Heat the oven to 350 degrees and bake them for 10-15 minutes (works for all three).
1. Chocolate Chip Pancake Muffins
Fill the muffin pan cup with 1/4 of the pancake mix. Sprinkle in baking chocolate chips and some chopped walnuts.
2. Strawberries and Cream Pancake Muffins
Fill the muffin pan cup with 1/2 of the pancake mix. In a separate bowl mix together cream cheese, powdered sugar and chopped fresh strawberries. Stir the strawberry mixture into the pancake mixture until it is almost to the top.
3. Cinnamon Swirl Pancake Muffins
Fill the muffin pan
cup with 1/4 of the pancake mix. In a separate bowl melt some butter
and add brown sugar and cinnamon and mix up well. Add a spoonful of the
mixture to each cup of pancake mix and swirl it around.
The kids absolutely loved these! And the best part is they can be prepared the night before and stored in the refrigerator for an easy weekday breakfast.
I also plan on attempting to make a healthier version of these in the
future. Using buckwheat pancake mix and only fresh fruit. But sometimes
it's nice to splurge on the sweet stuff!
