Lemon, Garlic and Rosemary Butter Chicken

 This is a really simple roast chicken recipe that everyone loves! Hope you enjoy it!

What you'll need for the roast chicken:

1 Whole Chicken (with giblets if you're going to make gravy)
2 Lemons
5 Sprigs of Rosemary
4 Garlic Cloves
1 Medium Yellow Onion
1 Stick of Butter
Garlic Salt
Pepper

*Preheat the oven to 350 degrees.


I like to make this chicken with mashed potatoes and asparagus. But you can make this with many different side dishes.

Step 1:

Cut the lemons into 1/4 slices. Set aside.

 
Step 2:

Peel garlic. Set 2 whole cloves aside and finely chop the other 2. 

Step 3: 

Finely chop 3 sprigs of rosemary (remove the stem). Set 2 sprigs of rosemary aside.



Step 4:

Melt the stick of butter half way.  You can either do it stove-top or in the microwave.


 Mix chopped garlic and rosemary with the butter. Set aside.












Step 5:

Chop Onion into 1/4 slices. Remove the middle of the onion to put in the chicken.


Step 6:

Rinse chicken and remove giblets. Place chicken in the baking dish. Stuff the cavity of the chicken with rosemary sprigs, onion, lemon slices, and garlic cloves.

Step 7:

Use a lemon wedge and squeeze the juice over the chicken. Take the butter mixture and rub it all over the chicken. Try and get some of the butter mixture under the chicken skin. Sprinkle garlic salt and freshly ground pepper over the chicken. Add the remainder onion and lemon around the chicken.
Step 8:

Bake the chicken until fully cooked. Every oven is different and the weight of each chicken is as well. I usually end up baking the chicken about an hour and a half.

*Serve with mashed potatoes and asparagus or whatever sides you choose.

  1. I tried this recipe at home and it came out great! The butter under the skin is a good tip!
