These mini taco bites are great for parties! You can also serve them as an appetizer. They're simple yet tasty and go great with the cilantro jalapeno sauce.
Ingredients:
Ground Beef
Flour Tortilla
Mexican Shredded Cheese
Re-Fried Beans
1/2 Red Onion
Green Chilies (diced)
Spices:
Garlic Salt
Cayenne Pepper
Cumin
Garnish:
Cilantro
Tomatoes
Sour Cream
Green Salsa (optional)
Step 1: Preheat oven to 375 degrees. Put beans (save and wash the can -- you'll use it in Step 4) and green chilies (diced) into a pan over low heat.
Step 2: Chop red onion and saute over medium heat until lightly browned.
Step 3: Add ground beef over medium heat. Once fully cooked, add cayenne, garlic salt, and cumin to taste. Reduce heat to lowest setting.
Step 4: Use the washed bean can to make tiny flour tortilla circles. I stack 3 tortillas at a time. Then press down on the can to cut out circles (up to 4 circles making 12 total).
*I do not believe in waste! Save the remaining flour tortilla scraps in a bowl and set aside for the next post -- Homemade Cinnamon Crisps!
Step 5: Place tortilla rounds in the nonstick mini muffin pan to form cups.
Step 6: Scoop beans and chili to fill up the cups halfway.
Step 7: Fill the tortilla cups all the way with the ground beef. Place in oven for 10 min.
Step 8: Take out of the oven and sprinkle the shredded cheese on top and place back in the oven until fully melted (about 5-7 min).
Step 9: Remove mini taco bites from muffin pan. If they're sticky from the cheese, use a knife to cut around them to pop them out.
Step 10: Serve with garnish and enjoy!
