Pumpkin Soup


Ingredients:
 
Fairytale Pumpkin
1 Leak (sliced)
3 Cloves of Garlic
32 oz Chicken or Vegetable Stock
Fresh Rosemary and Sage  (I put two large sprigs of both)
Fresh Grated Parmesan Cheese (to taste)

Directions:

Step 1: Set the oven for 350 degrees. Scoop all of the seeds and goop out of the pumpkin.

Step 2: Put all ingredients (including half of the parmesan cheese) into the pumpkin and place on a baking sheet in the oven for 2 hours. 

 Step 3: Take the pumpkin out of the oven. Scoop out the pumpkin along with the cooked broth and top with the rest of the parmesan cheese and serve.
