Just in time for the holidays! This mashed sweet potato is a festive addition to many meals this holiday season.
Ingredients:
Bag of Sweet Potatoes (about 5lbs/80oz)
1/2 Cup of Milk
1 Stick of Butter
1tsp Vanilla
Ground Ginger to Taste (I use 2tsp)
1/2 -3/4 Cup of Maple Syrup
Pecans for Garnish
Directions:
Step 1: Wash the sweet potatoes, peel them and cut small round slices (about half an inch thick).
Step 2: Put the sweet potato rounds in a large pot of water and boil them for about 20-25 min or until soft.
Step 3: Drain the cooked sweet potatoes. Put the stick of butter in the pot and pour the sweet potatoes back into the pot over the butter. Add the rest of the ingredients and mash together.
Step 4: Garnish with Pecans and serve.
