Crock-Pot Chicken Tikka Masala






Ingredients:

5 Chicken Breast or 2lbs of Chicken Breast
1 large onion, finely chopped
4 garlic cloves, minced
2 tablespoons of ground ginger
1 (29 oz.) can of tomato sauce
2 tablespoons olive oil
2-3 tablespoon Garam Masala


2 teaspoons paprika
½ teaspoon cinnamon
½ teaspoon cayenne pepper (to taste or heat preference)
½ teaspoon ground black pepper
3 bay leaves

1 can of coconut milk or a cup / 250 ml heavy cream
2 tablespoons
Fresh lemon juice (½ lemon)             


 

Directions:




Step 1: Grease the bottom and sides of your crock-pot with olive oil.

Step 2: Place your chicken in the crock-pot.

Step 3: Finely chop your onion and garlic cloves and add to the crock-pot.



Step 4: Add tomato sauce, olive oil, garam masala, ground ginger, cinnamon, paprika, cayenne pepper, and ground black pepper. 



Step 5: Mix all ingredients well. Place the three bay leaves on top.



Step 6: Cover your crock-pot. Set on high for 4 hours. Set your cornstarch, coconut milk (or heavy cream) and lemon aside.




Step 7: Let your chicken cook for 3.5 hours. Take your chicken breasts out and cut into bite sizes and place back into the crock-pot. Then add your remaining ingredients. Mix and cover for the remaining 20-30 min.


Step: Serve with Basamati rice (or a rice of your choice) and enjoy!
