Cinnamon Roll Pancakes


My kids absolute favorite breakfast is cinnamon roll pancakes!

This recipe has three parts to it:

1. Pancake Batter
You can definitely make them by scratch or in my case use a basic Bisquick recipe. 

2. Cinnamon Filling  
1/2 stick of butter
1/3 cup of brown sugar
1tbsp cinnamon 

3. Cream Cheese Topping
1/4  cup of cream cream cheese
1/2 stick of butter
3/4 powdered sugar
1tsp vanilla


Directions:

Prepare the pancake mix and set aside.

Prepare cinnamon filling. Melt the butter and add sugar and cinnamon. Mix well. Put the mix in a ziploc bag and cut a small hole in one of the corners. Set aside in a bowl because it will get messy.

I make the glaze as I'm cooking the pancakes so I can spread it on while it's warm. Melt the butter in a sauce pan. Add cream cheese and whisk until smooth. Slowly add powdered sugar while stirring. Lastly stir in vanilla. Keep the stove on melt and stir occasionally while making the pancakes.

To make the pancakes, pour the desired amount onto a medium hot and buttered pan. Wait for the batter to bubble up and swirl in the cinnamon filling. Wait a minute and then flip and cook the other side.

Top the pancakes with the cream cheese icing and serve.
