Roasted Beet and Goat Cheese Salad



Ingredients:

1 bundle of spinach
1 can of sliced beets
1/4 cup of walnuts chopped
1/2 cup of crumbled goat cheese
salt and pepper to taste

Directions:

To roast the beets, preheat the oven to 350 degrees. Drain the can of sliced beets and slice into halves. Mix the beets with a tablespoon of olive oil. Place on a cookie sheet and sprinkle some salt and pepper on top. Place in the oven for 15-18 min. Let the beets cool before adding them to the salad.

Rinse spinach and break off the stems. Crumble the goat cheese with your fingers. Chop walnuts.

Prepare:

Place spinach in the salad bowl. Top with beets, then goat cheese and walnuts

*This salad goes well with a basic olive oil and vinaigrette
